The trompo (vertical rotisserie) is the heart of real al pastor. Layers of marinated pork are stacked on a vertical spit with pineapple on top, slowly rotating as the meat caramelizes and the pineapple juices drip down. Our taqueros shave thin slices directly onto fresh tortillas—this is al pastor the way it's meant to be.
We invested in a real trompo because shortcuts don't cut it. This is the traditional Mexican method for al pastor, perfected over decades on the streets of Tijuana and Mexico. The result is tender, flavorful pork with crispy edges that you simply can't replicate any other way.
